Ingredients

  • 500 g chicken thighs
  • 50 g flour
  • 2 cloves garlic
  • 1 tsp ginger
  • 1 tbsp honey
  • 3 tbsp mayonnaise
  • 1 tbsp mirin
  • 500 ml oil
  • 100 g potato starch
  • 1 tbsp sake
  • 2 tbsp soy sauce

Directions

Step 1
Cut the chicken thighs into bite-sized pieces.
Step 2
In a bowl, combine soy sauce, sake, mirin, ginger, and garlic. Add the chicken pieces and marinate for at least 30 minutes.

In a separate bowl, mix potato starch and flour.
Step 4
Heat the vegetable oil in a large pan to 170°C (340°F).
Step 5
Dredge the marinated chicken pieces in the starch and flour mixture, ensuring they are well coated.
Step 6
Fry the chicken pieces in batches until golden brown and crispy, about 5-7 minutes per batch. Drain on paper towels.
Step 7
In a small bowl, mix mayonnaise and honey to make the honey mayo dip.
Step 8
Serve the karaage hot with the honey mayo dip on the side.
