  • 50 g black olives
  • 1 tsp black pepper
  • 1 cucumber
  • 100 g feta cheese
  • 30 ml lemon juice
  • 60 ml olive oil
  • 15 g parsley
  • 1 red onion
  • 200 g rice
  • 1 tsp salt
  • 2 tomatoes

Directions

Step 1
Cook the rice according to the package instructions. Let it cool completely.
Step 2
In a large bowl, combine the cooked rice, cucumber, tomatoes, red onion, feta cheese, black olives, and parsley.
Step 3
In a small bowl, whisk together the olive oil, lemon juice, salt, and black pepper.
