Step 1
Peel and cut the squash into small cubes.

Boil the squash in water until tender, then drain and mash it.
Step 3
In a large mixing bowl, combine the mashed squash with butter, baking soda, and flour. Mix until a dough forms.
Step 4
Roll out the dough on a floured surface to about 1/4 inch thickness and cut into circles.
Step 5
Heat the canola oil in a deep pan to 180°C (350°F).
Step 6
Fry the dough circles in batches until golden brown, then drain on paper towels.
