Ingredients

  • 400 g black beans
  • 0.5 tsp black pepper
  • 1 tsp chili powder
  • 2 tbsp cilantro
  • 1 tsp cumin
  • 2 cloves garlic
  • 2 tbsp lime juice
  • 180 g long grain rice
  • 1 tbsp olive oil
  • 1 onion
  • 1 tsp salt
  • 240 ml tomato sauce
  • 480 ml vegetable broth

Directions

Step 1
Heat the olive oil in a large pan over medium heat.
Step 2
Add the chopped onion and minced garlic. Cook until the onion is translucent.
Step 3
Stir in the rice, vegetable broth, tomato sauce, cumin, chili powder, salt, and black pepper.
Step 4
Bring the mixture to a boil, then reduce the heat to low. Cover and simmer for about 20 minutes, or until the rice is tender and the liquid is absorbed.
Step 5
Add the black beans to the pan and mix well. Cook for an additional 5 minutes to heat the beans through.
Step 6
Remove from heat and stir in the lime juice and chopped cilantro.
Step 7
