Homemade Blueberry Ice Cream

  • 300 g blueberries
  • 480 ml heavy cream
  • 2 tbsp lemon juice
  • 150 g sugar
  • 1 tsp vanilla extract
  • 240 ml whole milk

Directions

Step 1
In a medium saucepan, combine the blueberries, sugar, and lemon juice. Cook over medium heat, stirring occasionally, until the blueberries have released their juices and the mixture has thickened, about 10 minutes.
Step 2
Remove the blueberry mixture from the heat and let it cool to room temperature. Then blend until smooth.
Step 3
In a large bowl, combine the heavy cream, whole milk, and vanilla extract. Stir in the cooled blueberry mixture.
Step 4
Pour the mixture into an ice cream maker and churn according to the manufacturer's instructions, usually about 20-25 minutes.
Step 5
Transfer the ice cream to a lidded container and freeze for at least 4 hours or until firm. Serve and enjoy!
