  • 250 g all-purpose flour
  • 5 g baking soda
  • 115 g butter
  • 60 g cocoa powder
  • 30 ml cream
  • 1 egg
  • 200 g granulated sugar
  • 240 ml milk
  • 120 g peanut butter
  • 180 g powdered sugar
  • 2.5 g salt
  • 5 ml vanilla extract

Directions

Step 1
Preheat oven to 180°C (350°F). Line baking sheets with parchment paper.
Step 2
In a medium bowl, whisk together flour, cocoa powder, baking soda, and salt.
Step 3
In a large bowl, beat butter and granulated sugar until light and fluffy. Add egg and vanilla extract, and mix well.
Step 4
Gradually add the dry ingredients to the wet ingredients, alternating with milk, beginning and ending with the dry ingredients.
Step 5
Drop rounded tablespoons of batter onto prepared baking sheets, spacing them about 5 cm apart.
Step 6
Bake for 10-12 minutes, or until the cookies are set. Allow to cool completely on wire racks.
Step 7
To make the frosting, beat peanut butter and powdered sugar together until smooth. Add cream and beat until fluffy.
Step 8
Spread the peanut butter frosting on the flat side of one cookie and top with another cookie to form a sandwich.
