  • 190 grams all-purpose flour
  • 30 grams all-purpose flour
  • 2 grams baking powder
  • 5 grams baking soda
  • 80 grams brown sugar
  • 30 grams butter
  • 1 egg
  • 1 gram ground cinnamon
  • 125 grams melted butter
  • 3 ripe bananas
  • 1 gram salt
  • 200 grams sugar
  • 5 ml vanilla extract

Directions

Step 1
Preheat your oven to 190°C and line a muffin pan with paper liners.
Step 2
In a large bowl, mash the ripe bananas with a fork. Add the melted butter to the mashed bananas.
Step 3
Mix in the sugar, beaten egg, and vanilla extract until well combined.
Step 4
Sprinkle the baking soda, baking powder, and salt over the mixture and mix in.
Step 5
Add the flour and gently mix until just incorporated. Do not overmix.
Step 6
Fill the muffin cups about three-quarters full with the batter.
Step 7
In a small bowl, mix together the brown sugar, 30 grams of flour, and ground cinnamon for the crumb topping.
Step 8
Cut in the 30 grams of butter until the mixture resembles coarse crumbs, then sprinkle this topping over the muffins.
Step 9
Bake in the preheated oven for 18-20 minutes, or until a toothpick inserted into the center of a muffin comes out clean.
Step 10
Allow the muffins to cool in the pan for a few minutes before transferring to a wire rack to cool completely.
