Ingredients

  • 2 banana leaves
  • 1 teaspoon black pepper
  • 0.5 cup calamansi juice
  • 6 cloves garlic
  • 2 stalks lemongrass
  • 1 onion
  • 1 tablespoon salt
  • 0.5 cup soy sauce
  • 2 tablespoons sugar
  • 1 whole chicken

Directions

Step 1
Clean the whole chicken thoroughly and pat dry with paper towels.
Step 2
In a bowl, mix the lemongrass, garlic, onion, soy sauce, calamansi juice, sugar, black pepper, and salt to make the marinade.
Step 3
Rub the marinade all over the chicken, making sure to get some under the skin and inside the cavity.
Step 4
Stuff the chicken cavity with the pounded lemongrass stalks.
Step 5
If using banana leaves, wrap the chicken with the leaves for added flavor and aroma.
Step 6
Marinate the chicken in the refrigerator for at least 3 hours, preferably overnight.
Step 7
Preheat the oven to 190°C (375°F).
Step 8
Place the marinated chicken on a roasting rack in a baking pan.
Step 9
Roast the chicken in the preheated oven for about 90 minutes or until the chicken is cooked through and the skin is golden brown and crispy.
Step 10
Let the chicken rest for 10 minutes before carving. Serve hot and enjoy!
