  • 120 g all-purpose flour
  • 1 tsp baking soda
  • 100 g brown sugar
  • 80 ml honey
  • 60 ml milk
  • 0.5 tsp salt
  • 113 g unsalted butter
  • 1 tsp vanilla extract
  • 240 g whole wheat flour

Directions

Step 1
Preheat your oven to 350°F (175°C).
Step 2
In a large bowl, whisk together the whole wheat flour, all-purpose flour, brown sugar, baking soda, and salt.

Add the chilled, cubed butter to the dry ingredients. Use a pastry cutter or your fingers to work the butter into the flour mixture until it resembles coarse crumbs.
Step 4
In a small bowl, combine the honey, milk, and vanilla extract. Pour the wet mixture into the dry ingredients and mix until a dough forms.
Step 5
Divide the dough in half and shape each half into a rectangle. Wrap in plastic wrap and refrigerate for at least 30 minutes.
Step 6
On a floured surface, roll out one portion of the dough to about 1/8-inch thickness. Cut into squares or rectangles using a knife or cookie cutter.
Step 7
Place the cut-out dough onto a baking sheet lined with parchment paper. Repeat with the remaining dough.
Step 8
Bake in the preheated oven for 10-12 minutes, or until the edges are lightly browned. Allow to cool completely on a wire rack.
