Ingredients

  • 2 bay leaves
  • 500 ml beef broth
  • 1 tsp black pepper
  • 3 carrots
  • 2 celery stalks
  • 3 garlic cloves
  • 2 tbsp olive oil
  • 2 onion
  • 1500 g oxtail
  • 1 tsp paprika
  • 250 ml red wine
  • 1 tsp salt
  • 1 tsp thyme
  • 400 g tomatoes

Directions

Step 1
Heat the olive oil in a large pot over medium heat.
Step 2
Brown the oxtail pieces on all sides, then remove from the pot and set aside.
Step 3
In the same pot, add the chopped onions, garlic, carrots, and celery. Cook until the vegetables are softened.
Step 4
Add the tomatoes, beef broth, red wine, bay leaves, thyme, paprika, salt, and black pepper. Stir well to combine.
Step 5
Return the browned oxtail to the pot. Bring the mixture to a boil, then reduce the heat to low.
Step 6
Cover the pot and simmer for about 3 hours, or until the oxtail is tender and the sauce has thickened.
Step 7
