  • 1 tsp black pepper
  • 240 ml chicken broth
  • 6 chicken thighs
  • 2 tsp dried oregano
  • 8 garlic cloves
  • 30 ml lemon juice
  • 60 ml olive oil
  • 1000 g potatoes
  • 2 tsp salt

Directions

Step 1
Preheat your oven to 200°C (400°F).

In a large bowl, combine the olive oil, lemon juice, minced garlic, dried oregano, salt, and black pepper.

Add the chicken thighs to the bowl and coat them thoroughly with the marinade. Let them marinate for at least 30 minutes.

Place the marinated chicken thighs in a large roasting pan.

Add the potato chunks to the remaining marinade in the bowl and toss to coat. Arrange the potatoes around the chicken in the roasting pan.

Pour the chicken broth into the pan.
