Place the turkey carcass in a large stockpot.

Add the onion, carrots, celery, garlic, bay leaves, and peppercorns to the pot.

Pour in the water, ensuring that the ingredients are fully submerged.

Bring the mixture to a boil over medium-high heat.

Reduce the heat to low and simmer for 3-4 hours.

Skim off any foam or impurities that rise to the surface.

After simmering, strain the stock through a fine-mesh sieve into another pot or large bowl.
