Champurrado is a traditional Mexican chocolate-based atole, thickened with masa harina and flavored with cinnamon and piloncillo. It's a warm, comforting drink perfect for cold weather.

Ingredients

  • 1 cinnamon stick
  • 60 g masa harina
  • 90 g Mexican chocolate
  • 2 cups milk
  • 115 g piloncillo
  • 4 cups water

Directions

Step 1
In a medium pot, bring the water and cinnamon stick to a boil.
Step 2
Reduce the heat and simmer for about 10 minutes, until the water is infused with the cinnamon flavor.
Step 3
Remove the cinnamon stick and add the piloncillo, stirring until it is completely dissolved.
Step 4
In a separate bowl, whisk the masa harina with a little bit of water to make a smooth paste.
Step 5
Gradually add the masa harina paste to the pot, whisking constantly to avoid lumps.
Step 6
Pour in the milk and continue to cook over medium heat, stirring constantly, until the mixture thickens.
Step 7
Add the chopped Mexican chocolate and stir until melted and well combined.
Step 8
Serve hot and enjoy!
