Directions
Step 1
Heat the olive oil in a large skillet over medium heat.

Add the chopped onion and garlic, and sauté until the onion is translucent.

Add the chopped zucchini, tomatoes, and jalapeño (if using). Stir well to combine.

Season with salt and black pepper. Continue to cook, stirring occasionally, until the zucchini is tender, about 15-20 minutes.

Stir in the corn kernels and cook for an additional 5 minutes.
