Ingredients

  • 1 cabbage
  • 2 carrot
  • 3 stalks celery
  • 6 cups chicken broth
  • 2 cups diced tomatoes
  • 3 cloves garlic
  • 2 tbsp olive oil
  • 1 onion
  • 0.5 cup parsley
  • 0.5 tsp pepper
  • 1 tsp salt

Directions

Step 1
Heat the olive oil in a large pot over medium heat.
Step 2
Add the chopped onion and minced garlic, and sauté until the onion is translucent.
Step 3
Add the sliced carrots and chopped celery, and cook for about 5 minutes.
Step 4
Stir in the chopped cabbage and cook until it begins to wilt.

Pour in the chicken broth and diced tomatoes, and bring to a boil.
Step 6
Reduce the heat and simmer for about 20 minutes, or until the vegetables are tender.

Season with salt and black pepper, and stir in the chopped parsley.
