Ingredients

  • 0.5 tsp black pepper
  • 500 g collard greens
  • 1 tsp cumin
  • 3 cloves garlic
  • 1 tbsp ginger
  • 2 tbsp olive oil
  • 1 onion
  • 1 tsp salt
  • 1 tsp turmeric
  • 250 ml water

Directions

Step 1
Heat the olive oil in a large pot over medium heat.
Step 2
Add the chopped onion and cook until translucent, about 5 minutes.
Step 3
Stir in the minced garlic and ginger, and cook for another 2 minutes.
Step 4
Add the turmeric and cumin, and stir to coat the onions and garlic with the spices.
Step 5
Add the chopped collard greens to the pot, stirring well to combine with the onions and spices.
Step 6
Pour in the water, and add salt and black pepper. Stir to combine.
Step 7
Cover the pot and let the greens simmer over low heat for about 30 minutes, or until they are tender and the flavors have melded together.
Step 8
Adjust seasoning with more salt and pepper if needed before serving.
