Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners or grease well.

Sift the cake flour, baking powder, and salt together in a medium bowl. Set aside.

In a large bowl, beat the butter and 100 g of sugar until light and fluffy. Add the egg yolks one at a time, beating well after each addition.

Alternately add the flour mixture and milk to the butter mixture, beginning and ending with the flour mixture. Stir in the vanilla extract.

In another clean bowl, beat the egg whites with the cream of tartar until soft peaks form. Gradually add the remaining sugar and continue beating until stiff peaks form.

Gently fold the egg whites into the batter until just combined.

Spoon the batter into the prepared muffin tin, filling each cup about three-quarters full.

Bake for 20-25 minutes, or until a toothpick inserted into the center comes out clean.
