Deliciously spiced apple cider donuts that are perfect for a cozy fall treat. These donuts are fluffy on the inside with a slight crunch on the outside, and they're coated in a sweet cinnamon-sugar mixture.
Directions
Step 1
In a small saucepan, bring the apple cider to a boil over medium-high heat. Continue to boil until reduced to 60 ml (1/4 cup). Set aside to cool.
Step 2
In a large mixing bowl, whisk together the flour, granulated sugar, baking powder, baking soda, ground cinnamon, ground nutmeg, and salt.
Step 3
In another bowl, whisk together the melted butter, eggs, milk, vanilla extract, and the cooled apple cider reduction.
Step 4
Pour the wet ingredients into the dry ingredients and mix until just combined. Do not overmix.
Step 5
Transfer the dough to a floured surface and roll it out to about 1/2 inch thick. Use a donut cutter to cut out donuts and donut holes.
Step 6
Heat vegetable oil in a deep fryer or large pot to 180°C (350°F). Fry the donuts a few at a time, turning them once, until they are golden brown. This should take about 1-2 minutes per side.
Step 7
Remove the donuts from the oil and place them on a paper towel-lined plate to drain excess oil.
Step 8
While still warm, toss the donuts in cinnamon sugar to coat. Serve immediately.
