  • 125 grams all-purpose flour
  • 10 grams baking powder
  • 100 grams brown sugar
  • 1 egg
  • 240 milliliters milk
  • 120 grams rolled oats
  • 1 gram salt
  • 5 milliliters vanilla extract
  • 60 milliliters vegetable oil

Directions

Step 1
Preheat your oven to 375°F (190°C). Line a muffin tin with paper liners or grease it with cooking spray.
Step 2
In a large bowl, combine the rolled oats and milk. Let it sit for about 10 minutes to allow the oats to soak and soften.
Step 3
In another bowl, whisk together the flour, brown sugar, baking powder, and salt.
Step 4
Add the egg, vegetable oil, and vanilla extract to the oat mixture. Stir until well combined.
Step 5
Gradually add the dry ingredients to the wet ingredients, stirring just until combined. Do not overmix.
Step 6
Divide the batter evenly among the muffin cups, filling each about 2/3 full.
Step 7
Bake for 18-20 minutes, or until a toothpick inserted into the center of a muffin comes out clean.
Step 8
Allow the muffins to cool in the tin for a few minutes before transferring them to a wire rack to cool completely.
