A delicious and creamy aïoli made with roasted garlic that pairs perfectly with sandwiches, burgers, or as a dip for vegetables and fries.
Directions
Step 1
Preheat your oven to 400°F (200°C).

Slice the top off the head of garlic to expose the cloves. Drizzle with 1 tablespoon of olive oil and wrap in aluminum foil.

Roast the garlic in the preheated oven for 30-35 minutes, until the cloves are soft and golden brown.

Let the garlic cool, then squeeze the cloves out of their skins into a bowl and mash them into a paste.
Step 5
In a medium bowl, combine the mashed garlic, mayonnaise, lemon juice, Dijon mustard, salt, and black pepper. Mix well.

Slowly drizzle in the remaining olive oil while continuing to whisk the mixture until smooth and well combined.

Taste and adjust seasoning if necessary. Serve immediately or store in the refrigerator for up to a week.
