Ingredients

  • 1 cup beef broth
  • 500 grams beef tenderloin
  • black pepper
  • 4 tablespoons butter
  • 1 tablespoon Dijon mustard
  • 2 tablespoons flour
  • 250 grams mushrooms
  • 1 onion
  • 2 tablespoons parsley
  • salt
  • 1 cup sour cream

Directions

Step 1
Melt 2 tablespoons of butter in a large skillet over medium-high heat.
Step 2
Add the beef slices and cook until browned on all sides. Remove and set aside.
Step 3
In the same skillet, add the remaining 2 tablespoons of butter and sauté the onions until translucent.
Step 4
Add the mushrooms and cook until they release their juices and are browned.
Step 5
Sprinkle the flour over the mushrooms and onions, stirring well to combine.
Step 6
Gradually add the beef broth, stirring constantly until the sauce thickens.
Step 7
Return the beef to the skillet, stirring to coat with the sauce.
Step 8
Stir in the sour cream and Dijon mustard. Season with salt and black pepper to taste.
Step 9
Simmer on low heat for 5-10 minutes until the beef is cooked through and the sauce is well combined.
Step 10
Garnish with fresh parsley before serving. Serve hot over egg noodles or rice.
