These Korean beef soft tacos are a delicious and easy meal, perfect for any night of the week. The beef is slow-cooked to perfection with a blend of Korean spices and served in soft tortillas with fresh toppings.

Ingredients

  • 1.5 kg beef chuck roast
  • 100 g brown sugar
  • 1 bunch fresh cilantro
  • 4 garlic cloves
  • 1 tbsp ginger
  • 3 green onions
  • 200 g kimchi
  • 1 tsp red pepper flakes
  • 15 ml sesame oil
  • 12 soft tortillas
  • 120 ml soy sauce

Directions

Step 1
Place the beef chuck roast in a slow cooker.
Step 2
In a bowl, mix together soy sauce, brown sugar, sesame oil, minced garlic, grated ginger, and red pepper flakes.

Pour the mixture over the beef in the slow cooker.
Step 4
Cook on low for 8 hours or on high for 4 hours, until the beef is tender and easily shredded.

Shred the beef using two forks and mix it with the cooking liquid in the slow cooker.

Warm the tortillas in a skillet or microwave.

Assemble the tacos by placing shredded beef in each tortilla, then topping with kimchi, sliced green onions, and fresh cilantro.
