Step 1
Heat olive oil in a large pot over medium heat.

Add chopped onion, carrots, and celery. Cook until vegetables are softened, about 5 minutes.

Stir in minced garlic and tomato paste. Cook for another 2 minutes.

Add lentils, diced tomatoes, vegetable broth, cumin, thyme, bay leaf, salt, and black pepper. Bring to a boil.

Reduce heat to low, cover, and simmer for 30-35 minutes, or until lentils are tender.

Remove bay leaf and stir in chopped spinach. Cook for another 5 minutes, until spinach is wilted.
