  • 150 g cherry tomatoes
  • 1 cucumber
  • 100 g feta cheese
  • 1 clove garlic
  • 200 g kale
  • 2 tbsp lemon juice
  • 3 tbsp olive oil
  • 0.5 tsp salt

Directions

Step 1
Wash the kale thoroughly and remove the tough stems. Chop the leaves into bite-sized pieces.
Step 2
In a large bowl, combine the chopped kale, cherry tomatoes, and cucumber slices.
Step 3
In a small bowl, whisk together the olive oil, lemon juice, minced garlic, salt, and black pepper.
Step 4
Pour the dressing over the kale mixture and toss well to coat all the ingredients.
Step 5
Crumble the feta cheese over the salad and toss gently to combine.

Serve immediately or refrigerate for up to an hour to allow the flavors to meld.
