Heat the olive oil in a large skillet over medium-high heat. Add the ground beef and cook until browned.

Transfer the browned beef to the slow cooker.

In the same skillet, add the chopped onion, diced carrots, and diced celery. Cook until the vegetables are softened.

Add the minced garlic to the skillet and cook for another minute.
