Preheat your oven to 200°C (400°F).

In a large bowl, combine the flour and salt. Cut in the butter until the mixture resembles coarse crumbs. Add cold water, one tablespoon at a time, until the dough forms a ball. Wrap in plastic wrap and refrigerate for 1 hour.

On a lightly floured surface, roll out half of the dough to fit a 9-inch pie plate. Transfer dough to the pie plate. Trim to 1/2 inch beyond the edge of the plate; flute edges.

In a large bowl, combine the Saskatoon berries, sugar, lemon juice, and cornstarch. Spoon the berry mixture into the crust.
Step 5
Roll out remaining dough to fit top of pie; place over filling. Trim, seal, and flute edges. Cut slits in the top. Brush with beaten egg.

Bake in the preheated oven for 45-50 minutes, or until the crust is golden brown and the filling is bubbly. Cool on a wire rack.
