  • 0.5 tsp black pepper
  • 60 g butter
  • 960 ml chicken broth
  • 30 g flour
  • 2 cloves garlic
  • 240 ml heavy cream
  • 450 g mushrooms
  • 1 onion
  • 2 tbsp parsley
  • 1 tsp salt

Directions

Step 1
In a large pot, melt the butter over medium heat.
Step 2
Add the diced onion and cook until soft and translucent, about 5 minutes.
Step 3
Stir in the minced garlic and cook for another 1-2 minutes, until fragrant.
Step 4
Add the sliced mushrooms and cook until they release their moisture and become tender, about 10 minutes.
Step 5
Sprinkle the flour over the mushroom mixture and stir to combine. Cook for 2-3 minutes to eliminate the raw flour taste.
Step 6
Gradually pour in the chicken broth, stirring constantly to prevent lumps. Bring the mixture to a simmer and cook for 10-15 minutes, allowing the soup to thicken.
Step 7
Reduce the heat to low and stir in the heavy cream. Season with salt and black pepper to taste.
Step 8
Simmer the soup for another 5 minutes to heat through.
Step 9
Garnish with chopped fresh parsley before serving.
