Ingredients

  • 1 bay leaf
  • 960 ml beef broth
  • 900 g beef stew meat
  • 3 carrots
  • 60 g flour
  • 3 cloves garlic
  • 30 ml olive oil
  • 240 g peas
  • 1 tsp pepper
  • 4 potatoes
  • 1 tsp salt
  • 1 tsp thyme
  • 60 g tomato paste

Directions

Step 1
In a large bowl, combine the flour, salt, and pepper. Add the beef stew meat and toss to coat.
Step 2
Heat the olive oil in a large pot over medium-high heat. Add the beef and cook until browned on all sides.
Step 3
Stir in the beef broth, tomato paste, garlic, bay leaf, and thyme. Bring to a boil, then reduce the heat to low, cover, and simmer for 1 hour.
Step 4
Add the carrots and potatoes to the pot. Cover and continue to simmer for an additional 40 minutes, or until the vegetables are tender.
Step 5
Stir in the frozen peas and cook for another 10 minutes. Remove the bay leaf before serving.
