A delicious and healthier take on the classic Eggplant Parmesan, made using an air fryer for a crispy and flavorful result without all the extra oil.
Directions
Step 1
Preheat your air fryer to 375°F (190°C).

Slice the eggplant into 1/4 inch rounds.

In a bowl, beat the eggs with water.
Step 4
In another bowl, mix the breadcrumbs and Parmesan cheese.
Step 5
Dip each eggplant slice in the egg mixture, then coat with the breadcrumb mixture.

Spray the air fryer basket with olive oil spray.
Step 7
Place the coated eggplant slices in the air fryer basket in a single layer, spray the tops with olive oil spray.

Air fry for 15 minutes, turning halfway through, until golden and crispy.
Step 9
Spread a layer of marinara sauce in a baking dish. Place the air-fried eggplant slices on top, then cover with more marinara sauce and mozzarella cheese.
Step 10
Bake in a preheated oven at 375°F (190°C) for 15 minutes, until the cheese is melted and bubbly.
