Classic Potato Scones

These traditional potato scones are perfect for breakfast or as a side dish. Made with simple ingredients, they are crispy on the outside and soft on the inside.

Ingredients

  • 1 teaspoon baking powder
  • 30 grams butter
  • 120 grams flour
  • 450 grams potatoes
  • 1 teaspoon salt

Directions

Step 1
Boil the potatoes in a pot of salted water until tender, about 15 minutes. Drain and mash until smooth.
Step 2
Add the butter to the mashed potatoes and mix until melted and combined.
Step 3
In a separate bowl, sift together the flour, baking powder, and salt.
Step 4
Add the flour mixture to the mashed potatoes and mix until a dough forms.
Step 5
Turn the dough out onto a floured surface and roll it out to about 1 cm thickness.
Step 6
Cut the dough into triangles or rounds.
Step 7
Heat a griddle or frying pan over medium heat and cook the scones for 3-4 minutes on each side, until golden brown.
