Spanikopita is a traditional Greek savory pie filled with spinach, feta cheese, and herbs, all encased in crispy, golden phyllo pastry. Perfect for a flavorful appetizer or a light main course.
Directions
Step 1
Preheat your oven to 175°C (350°F).
Step 2
In a large skillet, heat the olive oil over medium heat. Add the onions and green onions, and sauté until tender.
Step 3
Add the spinach and cook until wilted. Remove from heat and let it cool slightly.
Step 4
In a large bowl, combine the cooked spinach mixture, feta cheese, beaten eggs, dill, and parsley. Mix well.
Step 5
Brush a baking dish with some melted butter. Layer half of the phyllo sheets in the dish, brushing each sheet with melted butter.
Step 6
Spread the spinach mixture evenly over the phyllo layers.
Step 7
Layer the remaining phyllo sheets on top, brushing each one with melted butter.
Step 8
Using a sharp knife, cut the spanikopita into squares or triangles before baking.
Step 9
Bake in the preheated oven for 45 minutes or until the phyllo is golden brown and crisp.
Step 10
Let the spanikopita cool for a few minutes before serving. Enjoy!
