Ingredients

  • 15 g adobo seasoning
  • 500 g beef
  • 5 g black pepper
  • 500 g chicken thighs
  • 30 g cilantro
  • 2 corn
  • 4 garlic cloves
  • 1 green bell pepper
  • 30 ml olive oil
  • 1 onion
  • 500 g pork ribs
  • 300 g potatoes
  • 300 g pumpkin
  • 5 g salt
  • 120 ml sofrito
  • 2000 ml water
  • 300 g yautía
  • 300 g yuca

Directions

Step 1
Heat olive oil in a large pot over medium heat.
Step 2
Add sofrito, garlic, onion, and green bell pepper. Cook until softened.
Step 3
Add beef, pork ribs, and chicken. Cook until browned.
Step 4
Add water, pumpkin, yautía, yuca, corn, and potatoes.
Step 5
Season with adobo, salt, and black pepper. Stir well.
Step 6
Bring to a boil, then reduce heat and simmer for about 1 hour or until vegetables and meats are tender.
Step 7
Add cilantro and adjust seasoning if necessary. Cook for an additional 10 minutes.
Step 8
Serve hot and enjoy your Puerto Rican Sancocho.
