A tangy and sweet Filipino relish made primarily from green papaya, perfect as a side dish to grilled or fried dishes.
Directions
Step 1
In a large bowl, combine the julienned green papaya with 1 tablespoon of salt. Let it sit for 1 hour to draw out moisture.
Step 2
Rinse the papaya under cold water to remove the salt. Squeeze out excess water and drain well.
Step 3
In a separate bowl, mix the julienned carrot, red bell pepper, ginger, garlic, and raisins.
Step 4
In a saucepan, combine the white vinegar, sugar, and peppercorns. Bring to a boil and stir until the sugar is dissolved. Let it cool slightly.
Step 5
Combine the drained papaya with the vegetable mixture. Pour the vinegar mixture over the vegetables and mix well.
Step 6
Transfer the atsara into sterilized jars and refrigerate for at least 24 hours before serving to allow the flavors to meld.
