Ingredients

  • 0.5 tsp black pepper
  • 1 cup cherry tomatoes
  • 2 pieces chicken breast
  • 1 cucumber
  • 0.5 cup feta cheese
  • 2 tbsp lemon juice
  • 4 cups mixed greens
  • 2 tbsp olive oil
  • 0.5 red onion
  • 1 tsp salt

Directions

Step 1
Preheat the oven to 375°F (190°C).
Step 2
Brush the chicken breasts with olive oil and season with salt and black pepper.
Step 3
Place the chicken breasts on a baking sheet and bake for 20-25 minutes or until fully cooked. Let cool and then slice into strips.
Step 4
In a large bowl, combine the mixed greens, cherry tomatoes, cucumber, red onion, and feta cheese.
Step 5
Add the sliced chicken to the salad.
Step 6
Drizzle with lemon juice and toss to combine.
