  • 50 grams butter
  • 500 grams celery
  • 1000 ml chicken broth
  • 100 ml cream
  • 30 grams flour
  • 2 cloves garlic
  • 250 ml milk
  • 1 onion
  • 1 teaspoon salt

Directions

Step 1
Melt the butter in a large pot over medium heat.
Step 2
Add the chopped onion and minced garlic. Cook until the onion is translucent.

Stir in the chopped celery and cook for about 5 minutes.

Sprinkle the flour over the vegetables and stir well to coat.

Gradually add the chicken broth, stirring constantly to avoid lumps.

Bring the mixture to a boil, then reduce the heat and let it simmer for about 20 minutes, or until the celery is tender.

Use an immersion blender to puree the soup until smooth.

Stir in the milk, salt, black pepper, and heavy cream. Heat through but do not boil.
