  • 1 bay leaf
  • 0.5 teaspoon black pepper
  • 800 grams canned tomatoes
  • 0.5 teaspoon cayenne pepper
  • 2 celery stalks
  • 240 milliliters chicken broth
  • 1 teaspoon dried oregano
  • 1 teaspoon dried thyme
  • 3 garlic cloves
  • 1 green bell pepper
  • 2 tablespoons olive oil
  • 1 onion
  • 1 teaspoon salt
  • 2 tablespoons tomato paste

Directions

Step 1
Heat the olive oil in a large saucepan over medium heat.
Step 2
Add the chopped onion, green bell pepper, and celery. Cook until the vegetables are tender, about 5 minutes.

Stir in the minced garlic and cook for an additional 1 minute.

Add the diced tomatoes, tomato paste, and chicken broth. Stir to combine.

Add the bay leaf, dried thyme, dried oregano, cayenne pepper, black pepper, and salt. Stir to combine.

Bring the mixture to a boil, then reduce the heat and let it simmer for 30 minutes, stirring occasionally.

Remove the bay leaf before serving. Adjust seasoning with additional salt or pepper if needed.
