Step 1
Spatchcock the chicken by removing the backbone and flattening it.
Step 2
In a bowl, mix olive oil, lemon juice, paprika, minced garlic, salt, black pepper, cayenne pepper, and dried oregano to make the marinade.

Rub the marinade all over the chicken, making sure to get it under the skin as well. Let it marinate for at least 2 hours, preferably overnight in the refrigerator.

Preheat the grill to medium-high heat.

Grill the chicken skin-side down for about 10 minutes until the skin is crispy and golden brown.

Flip the chicken and continue grilling for another 20-25 minutes until the chicken is cooked through and the internal temperature reaches 75°C (165°F).

Remove the chicken from the grill and let it rest for 10 minutes before serving.
