  • 1 bay leaf
  • 1 bell pepper
  • 1 tsp black pepper
  • 2 celery stalk
  • 1 l chicken broth
  • 500 g crowder peas
  • 2 garlic cloves
  • 1 onion
  • 1 tsp salt
  • 200 g smoked meat

Directions

Step 1
Rinse and sort the crowder peas to remove any debris.
Step 2
In a large pot, add the smoked meat, chopped onion, garlic, bell pepper, and celery. Sauté until the vegetables are tender.
Step 3
Add the crowder peas to the pot, followed by the chicken broth.
Step 4
Season with black pepper, salt, and add the bay leaf.
Step 5
Bring the mixture to a boil, then reduce the heat and let it simmer for about 1.5 to 2 hours, or until the peas are tender.
Step 6
Remove the bay leaf and smoked meat. Shred the meat and return it to the pot.
Step 7
Stir well and adjust seasoning if necessary before serving.
