Preheat your oven to 375°F (190°C) and grease a muffin tin.

Cut the apples in half, remove the core, and slice them thinly. Place the slices in a bowl with lemon juice and some water. Microwave for about 3 minutes until they are slightly softened.

Roll out the puff pastry on a lightly floured surface and cut it into 6 strips.

In a small bowl, mix the apricot preserves with a teaspoon of water. Spread a thin layer of the mixture on each strip of puff pastry.

Arrange the apple slices along one edge of each strip, overlapping slightly. Sprinkle with cinnamon.

Fold the bottom half of the puff pastry over the apple slices and carefully roll the strip to form a rose shape. Place each rose in a prepared muffin tin.

Bake for about 40-45 minutes, until the pastry is golden and fully cooked.
