Step 1
Preheat your oven to 180°C (350°F).

In a large skillet, heat the olive oil over medium heat.

Add the sausages and cook until browned on all sides. Remove and set aside.

In the same skillet, add the chopped onion and garlic. Cook until the onion is translucent.

Add the sliced carrots and celery to the skillet and cook for about 5 minutes.

Stir in the canned tomatoes, chicken stock, dried thyme, dried oregano, salt, and black pepper. Bring to a simmer.
