Ingredients

  • 2 tbsp aji amarillo paste
  • 8 black olives
  • 240 ml evaporated milk
  • 225 g fresh cheese
  • 2 cloves garlic
  • 2 hard-boiled eggs
  • 4 lettuce leaves
  • 1 tsp salt
  • 60 ml vegetable oil
  • 6 yellow potatoes

Directions

Step 1
Boil the yellow potatoes in salted water until tender. Allow them to cool, then peel and slice them.
Step 2
In a blender, combine the fresh cheese, evaporated milk, aji amarillo paste, vegetable oil, garlic, and salt. Blend until smooth and creamy.
Step 3
Arrange the lettuce leaves on a serving platter and place the sliced potatoes on top.
Step 4
Pour the cheese sauce over the potatoes, covering them evenly.
Step 5
Garnish with black olives and sliced hard-boiled eggs.
