Ingredients

  • 1 bay leaf
  • 4 cups beef broth
  • 1000 g beef chuck
  • 0.5 tsp black pepper
  • 3 carrots
  • 2 stalks celery
  • 3 cloves garlic
  • 2 tbsp olive oil
  • 1 onion
  • 1 cup peas
  • 4 potatoes
  • 1 tsp salt
  • 1 tsp thyme
  • 2 tbsp tomato paste

Directions

Step 1
Season the beef with salt and pepper.
Step 2
Heat the olive oil in a large pot over medium-high heat.
Step 3
Brown the beef in batches, setting aside each batch once browned.
Step 4
Add the onion and garlic to the pot and cook until softened.
Step 5
Return the beef to the pot along with the carrots, celery, and potatoes.
Step 6
Stir in the beef broth, tomato paste, bay leaf, and thyme.
Step 7
Bring the mixture to a boil, then reduce the heat to low and simmer for 90 minutes, or until the beef and vegetables are tender.
Step 8
Remove the bay leaf and stir in the frozen peas. Cook for an additional 5 minutes.
Step 9
Adjust seasoning with salt and pepper to taste before serving.
