Step 1
In a small bowl, mix the soy sauce, rice vinegar, ketchup, sugar, cornstarch, and water. Set aside.

Heat the vegetable oil in a large pan over medium heat. Add the garlic and ginger and sauté for 1 minute.

Add the shrimp to the pan and cook until they turn pink, about 3-4 minutes.

Remove the shrimp from the pan and set aside. In the same pan, add the bell pepper and pineapple chunks. Cook for 3-4 minutes.

Return the shrimp to the pan and pour in the sauce mixture. Stir well to coat everything evenly.
