  • 100 grams all-purpose flour
  • 120 grams butter
  • 400 ml coconut milk
  • 3 eggs
  • 1 pinch salt
  • 150 grams shredded coconut
  • 200 grams sugar
  • 1 teaspoon vanilla extract

Directions

Step 1
Preheat your oven to 180°C (350°F).

In a mixing bowl, cream together the sugar and butter until light and fluffy.

Add the eggs one at a time, beating well after each addition.

Stir in the coconut milk and vanilla extract until well combined.

In another bowl, whisk together the flour and salt. Gradually add this to the wet mixture, stirring until just combined.
