Ingredients

  • 10 g black pepper
  • 50 g brown sugar
  • 1000 g deer meat
  • 5 g garlic powder
  • 10 g kosher salt
  • 10 ml liquid smoke
  • 5 g onion powder
  • 5 g paprika
  • 2 g red pepper flakes
  • 120 ml soy sauce
  • 60 ml Worcestershire sauce

Directions

Step 1
Slice the deer meat into thin strips, about 6 mm thick.
Step 2
In a large bowl, combine soy sauce, Worcestershire sauce, liquid smoke, brown sugar, kosher salt, black pepper, onion powder, garlic powder, paprika, and red pepper flakes.
Step 3
Add the deer meat strips to the marinade and mix well to ensure all the meat is coated.
Step 4
Cover the bowl and refrigerate for at least 6 hours, or overnight for best results.
Step 5
Preheat your oven to 70°C.
Step 6
Arrange the marinated meat strips on wire racks placed on baking sheets.
Step 7
Dry the meat in the oven for about 4 to 6 hours, or until the jerky is dry but still slightly pliable.
Step 8
Allow the jerky to cool completely before storing in an airtight container.
