  • 2 bay leaves
  • 0.5 tsp black pepper
  • 2 carrot
  • 2 stalks celery
  • 1 liter fish stock
  • 3 cloves garlic
  • 2 tbsp olive oil
  • 1 onion
  • 2 tbsp parsley
  • 1 tsp salt
  • 500 g shrimp
  • 400 g tomatoes

Directions

Step 1
Heat olive oil in a large pot over medium heat.
Step 2
Add diced onion and cook until translucent, about 5 minutes.
Step 3
Add minced garlic and cook for another 1 minute.
Step 4
Add sliced carrots and celery to the pot and cook for 5 minutes.
Step 5
Stir in canned diced tomatoes and cook for another 5 minutes.
Step 6
Pour in the fish stock and add bay leaves. Bring to a boil.
Step 7
Reduce heat and let it simmer for 20 minutes, or until the vegetables are tender.
Step 8
Add the shrimp to the pot and cook until pink and opaque, about 3-5 minutes.
Step 9
Season with salt and black pepper.
Step 10
Remove bay leaves before serving.
Step 11
Garnish with fresh parsley and serve hot.
