  • 1.5 cups Arborio rice
  • 0.5 teaspoon black pepper
  • 2 tablespoons butter
  • 4 cups chicken broth
  • 0.5 cup dry white wine
  • 2 tablespoons fresh parsley
  • 2 garlic cloves
  • 2 tablespoons olive oil
  • 1 onion
  • 0.5 cup Parmesan cheese
  • 1 teaspoon salt

Directions

Step 1
Set the Instant Pot to sauté mode and heat the olive oil.
Step 2
Add the chopped onion and cook until translucent, about 3-4 minutes.

Stir in the minced garlic and cook for another minute.

Add the Arborio rice and cook, stirring frequently, until the rice is lightly toasted, about 2-3 minutes.

Pour in the dry white wine and cook until the wine has mostly evaporated, about 1-2 minutes.

Add the chicken broth and stir to combine.

Secure the lid on the Instant Pot and set it to high pressure for 6 minutes.
