Ingredients

  • 2 bay leaves
  • 0.5 tsp black pepper
  • 1 liter chicken broth
  • 6 chicken thighs
  • 1 bunch cilantro
  • 4 garlic cloves
  • 1 green bell pepper
  • 150 g green peas
  • 3 tbsp olive oil
  • 1 onion
  • 100 g pimento stuffed olives
  • 1 red bell pepper
  • 300 g rice
  • 1 tsp salt
  • 200 g tomato sauce

Directions

Step 1
Heat the olive oil in a large pot over medium heat.
Step 2
Add the diced onion, green bell pepper, red bell pepper, and minced garlic. Sauté until the vegetables are tender and the onion is translucent.
Step 3
Add the chicken thighs to the pot and brown them on all sides.
Step 4
Stir in the tomato sauce, chicken broth, bay leaves, salt, and black pepper.
Step 5
Bring the mixture to a boil, then reduce the heat and let it simmer for about 20 minutes.
Step 6
Add the rice, pimento stuffed olives, and green peas to the pot. Stir well to combine.
Step 7
Cover the pot and let it simmer for another 20-25 minutes, or until the rice is cooked and the chicken is tender.
Step 8
Stir in the chopped cilantro just before serving.
