Heat the olive oil in a large pot over medium heat.

Add the diced onion, green bell pepper, red bell pepper, and minced garlic. Sauté until the vegetables are tender and the onion is translucent.

Add the chicken thighs to the pot and brown them on all sides.

Stir in the tomato sauce, chicken broth, bay leaves, salt, and black pepper.
