  • 480 g all-purpose flour
  • 10 g baking soda
  • 3 eggs
  • 200 g granulated sugar
  • 170 g honey
  • 240 g powdered sugar
  • 900 g sour cream
  • 115 g unsalted butter
  • 10 ml vanilla extract
  • 10 g white vinegar

Directions

Step 1
In a medium saucepan, combine honey, sugar, and butter. Heat over medium heat until the mixture is smooth and the sugar has dissolved.
Step 2
Remove from heat and let it cool slightly. Add the eggs one at a time, whisking constantly to prevent the eggs from cooking.

In a small bowl, mix baking soda and vinegar. Add this mixture to the honey mixture and stir to combine.

Gradually add the flour, mixing until a smooth dough forms. Divide the dough into 8 equal parts.

Roll each part into a thin circle, approximately 20 cm in diameter. Bake each layer at 180°C for 5-7 minutes, or until golden brown. Let the layers cool completely.

In a large bowl, whisk together sour cream, powdered sugar, and vanilla extract until smooth.

Spread a generous amount of the cream mixture on each cake layer, stacking them one on top of the other.
Step 8
Cover the entire cake with the remaining cream mixture. Refrigerate for at least 4 hours or overnight to allow the flavors to meld and the cake to set.
