Step 1
Preheat your oven to 180°C (350°F).
Step 2
In a large skillet, heat the olive oil over medium heat. Add the chopped onion and minced garlic, and sauté until the onion is translucent.

Add the chicken breasts to the skillet and cook until they are no longer pink in the center. Remove the chicken from the skillet and shred it using two forks.

In a mixing bowl, combine the shredded chicken, half of the shredded cheddar cheese, salt, pepper, and half of the chopped cilantro.

Spread a thin layer of green enchilada sauce on the bottom of a baking dish.

Fill each tortilla with the chicken mixture, roll them up, and place them seam-side down in the baking dish.

Pour the remaining green enchilada sauce over the top of the tortillas and sprinkle with the remaining shredded cheddar cheese.

Bake in the preheated oven for 20-25 minutes, or until the cheese is melted and bubbly.
